Sauvignon Republic Cellars-the big question is...Why Saubvignon Blanc only?
We confess that we are all passionate about this grape. Two things intrigue us:

It is a grape variety that expresses "terroir" (the place that it is grown) more profoundly than almost any other grape variety. California, New Zealand, South Africa, Chile and France are the locations where it has shown greatness. We intend to produce a wine in each area. It will allow us to promote and share the unique flavors that each location provides.

Food styles and flavors have changed profoundly in recent years. Asian, Hispanic and Indian flavors and techniques are being widely embraced by both chefs and home cooks. European and Mediterranean flavors of course will continue to be a part of "American" food but the increasing influence of these new cuisines is having a profound impact on wine choices. Sauvignon Blanc has the unique ability to wrap itself around all of these new flavors and cuisines.

What are the key sales messages Sauvignon Republic Cellars would like you to know!

A tight focus on one varietal only. We are not trying to be all things to all people!

We are committed to becoming the experts on Sauvignon Blanc and our commitment to produce it around the world in the best locations should give us unique visibility.

We see wine as food. It is not something apart but there to be enjoyed with the rest of the foods at the meal. This may seem obvious but much of the promotion and sales of wine treats it as something separate from the rest of the meal. We detect, especially in these times, a longing by many of us to more fully enjoy the pleasures of the table. Wine can be an important conduit for connection and friendship. All of our activities (recipes, events, etc.) will recognize and support this view. We are active in organizations like SLOW Food, The Chef's Collaborative and others that encourage a healthy, food centered life style.

The four gents involved in together bring a boatload of wine and culinary experience that should help make this Sauvignon Republic Cellars an exciting and fun operation. We are committed to innovation and practices both in the vineyard as well as in the winery that will yield the best quality wine that we can make. Our decision to use the Stelvin (screw cap) closure only on our wines is an example of this commitment. This closure is clearly superior to cork finished wines that too often suffer from incidences of cork taint.

We hope you will enjoy our wines and visit our website regularly!
