Sauvignon Republic Cellars offers you our latest release: 2005 Russian River Valley Sauvignon Blanc

Vintage 2005
The growing season was classic-cool, long and slow, maximizing the benefits of hang-time. Sauvignon is a fairly early-maturing grape, and since 04 had been one of the earliest harvests in memory, everyone expected coolness of 05 to shift us back to historical average harvest dates. As it developed, delayed bud break for some varieties and delayed flowering for most, together with later rains encouraging stronger vine growth, pushed harvest dates quite late. Nothing but good news resulted, however, since relatively cool weather throughout bought time for superb flavor development in Sauvignon with the added benefit of great acid retention.

Winemaking Notes
In the cool-climate of Russian River Valley, patience and vigilance are key when tracking maturity leading up to harvest. Our work was cut-out for us this year as we added several new growers. Thanks to frequent berry sampling we were able to capture some spicy green notes from the earliest pickings (21-22 Brix) and complement them with optimal ripe trop fruit notes with fruit from more advanced sugar-ripeness (23-24 Brix) The cool overall season gave us crisp acids and pH's in the low 3's. All fruit was picked in the cool morning in small bins and crushed promptly. Long, cool fermentation with select cultured yeasts allowed development and retention of classic Sauvignon flavors. This wine has seen only stainless steel cooperage. The alcohol came in under 14.
~ John Buechsenstein, Winemaker

Tasting Notes
Classic pale-straw color with rich pineapple, grapefruit, and tropical fruit layers and a touch of herbal "green" Sauvignon notes. Multiple vineyard sources allowed the assembly of a blend that showcases fruitiness and refreshing acidity supported by a surprising richness and length of finish.

Foods That Go With Our Sauvignon Blanc
The bright lemony flavors layered with the exotic hints of tropical fruit make this wine a natural with almost any cuisine. It's like adding a squeeze of ripe lemon and what food wouldn't be enhanced by that?!! Fresh aromatic herbs such as basil, dill, mint, lemon grass, kaffir lime and cilantro are great bridges to use between food and this delicious wine.
~ Chef John Ash
